Academia Barilla has selected 50 recipes that contain potatoes. Some of them are typical Italian dishes, other recipes were created by combining the magic of potatoes with other typical ingredients of Italian cuisine: cheese, meat products, also with chestnuts, mushrooms and dried cod. Other recipes originate in various countries, such as blini in Russia or rösti in Switzerland, and are not part of the history of Italian gastronomy. However, Academia Barilla chose them because it follows these principles: it honors and loves the basic ingredients, simplicity combined with elegance and, above all, the joy of sharing its knowledge.

Nektera z nich jsou typickymi italskymi jidly, dalsi recepty byly vytvoreny spojenim kouzla brambor s dalsimi typickymi ingrediencemi italske kuchyne: syry, masnymi vyrobky, taktez s kastany, hriby a susenou treskou. Dalsi recepty maji puvod v ruznych zemich, jako blini v Rusku nebo rosti ve Svycarsku, a nejsou soucasti historie italske gastronomie. Avsak Academia Barilla je vybrala, protoze se ridi temito zasadami: cti a miluje zakladni ingredience, jednoduchost spojena s eleganci a predevsim ma radost ze sdileni svych znalosti.
